Dinner with Dr. Ssenoga Dickson and wife Liz

Cooking on a three stone hearth.

Steamed plantain or matooke is the staple dish. Add to this cassava, Irish (potatoes), sweet potato, yams, millet, and rice. For vegetables there may be cabbage or kale. Chicken, beef and goat are the meat dishes, and as a special treat there may be tilapia from Lake Victoria. A sauce of g-nuts might be offered, too.

Hand washing is ritual. A servant brings soap, a wash basin and pitcher to the table before and after eating. The "after" part is because the fingers are often the implement of preference. Even a restaurant will have facilities for hand washing.

Observe the practice for conversation. In some households eating is serious enough that conversation is foregone, especially by children.
